Pumpkin Brownies
1 cup sifted all-purpose flour
1/4 cup instant mashed potatoes
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup butter
1 1/2 cups granulated sugar
1 egg
1/4 cup canned pumpkin
1/2 cup chopped pecans
Sift together flour, potato granules, baking powder, salt and cinnamon. Melt butter and stir in sugar and egg. Blend all together. Bake in a greased 8-inch square pan at 350 degrees F for 40 minutes.
